Tomato, Ham and Corn Chowder


Ingredients:
 2 large tomatoes
2 tablespoons vegetable oil
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 can (14 1/2 ounces) chicken broth
1 cup frozen corn kernels
1 teaspoon basil leaves, crushed
1/4 teaspoon salt
1/8 teaspoon ground black pepper
3/4 cup cubed Wellshire Farms Uncured Ham

Instructions:
 Core tomatoes; coarsely chop (makes about 2 1/2 cups); set aside.

In medium saucepan, over medium-low heat, heat oil. Add onion, green pepper and reserved chopped tomatoes; saute, stirring occasionally, about 5 minutes, or until onion and pepper are crisp-tender.

Add broth, corn, basil, salt and pepper; simmer, covered, about 5 minutes to blend flavors.

Stir in ham; cook uncovered about 5 minutes, until heated through.

Note: Use tomatoes held at room temperature until fully ripe.
