Wellshire Pork Andouille Stir Fry


Ingredients:
 
(1) 12 oz package Wellshire Pork Andouille chopped into bite size pieces
4  stalks celery, sliced
4 carrots, thinly sliced
2 green bell peppers, cut into strips
4 cups organic chicken broth
2 cups whole-wheat couscous
1/4 cup chopped fresh cilantro

Instructions:
 
1.  In sauté pan, sauté andouille, celery, peppers and carrots until carrots are tender.
2.   Bring 3 cups broth to a boil in a saucepan. Stir in couscous; cover and remove from heat. Let stand for five minutes.
3.  Add 1 cup of broth into vegetables. Cook until thickened.
4. Sprinkle cilantro over vegetables.
5.  Uncover couscous, fluff with a fork and season with salt and pepper to taste.
6.  Serve Vegetables over couscous.
 
Optional: You can add additional meat to the stir fry. 
8 oz. of boneless, skinless chicken breast, cut into bite size pieces or shrimp.  Cook during the first step, until either the chicken or shrimp is no longer pink. 

Makes 8 servings
